Alright, bread friends! Help me out!
I took some time off from making bread since I was miserable pregnant, recovering from childbirth, in the hospital with illness, etc, so it's been awhile since I've made any. I'm finally in a place where I can dive back in and I'm super excited to do so! I pull out my trusty everyday recipe and I get to work.
The loaves have no oven spring.
So I try again a few days later. Same result.
I wait a few weeks to regain some confidence. Same result.
I try it with all bread flour, no wheat flour. Same result.
I'm using the exact same recipe as I did before and I NEVER had problems back then. I know my yeast is fine, since I've made pizza and naan bread successfully several times in the last few months. The dough rises nicely in the pans, but the top deflates and becomes very flat while baking.
What am I doing wrong?!? I'm SO frustrated!!! I miss my homemade bread and I'm tired of feeding cheap crappy bread to my family!!
